The World’s Best Homemade Oatmeal

IMG_6787516IMG_65u8910The name doesn’t lie!  This gluten free, dairy free oatmeal is absolutely delicious and it is a healthy option for breakfast!  It will keep you fuller longer, cutting down the need to snack before lunch.  I use the Gluten Free Old Fashioned Rolled Oats from Bob’s Red Mill, and I follow the recipe right on the back!  Of course, I added a few personal touches to make the oatmeal more suited to my tastes!

First, bring 2 cups of water and 1/4 tsp salt to a boil.  Add one cup of Bob’s Red Mill Gluten Free Rolled Oats, and reduce heat and cook for 10 to 20 minutes.  (I usually cook mine for about 18 minutes, because I like it to be a bit thicker)!  Cover the oatmeal while it’s cooking, making sure to stir occasionally.  Remove from the heat and let stand for a few minutes (still covered).  This will make two servings!

After the oatmeal is done, I add some of my favorite things into it to give it some great flavor!  First, I add in some coconut milk!  I stir the oatmeal while I am adding in the coconut milk, and once it turns more of a white color I stop adding it in!  I also like to add some brown sugar (about a tbs or so), about 3 dashes of cinnamon, and a handful of chopped walnuts!

I never liked oatmeal until my mom started making this specific recipe for me, and now I find myself making it more and more often!  This is a great healthy alternative for breakfast, especially since it is gluten and dairy free!  You do not need to make this recipe GF or DF, and feel free to substitute some of your favorite foods into your oatmeal!  Let me know if you tried this recipe, and what post you would like to see next!
